I cook for six people in the house (3 meals a day) so needless to say there's little room to do a lot of food-prep for myself and I'd like to just cook food that is appetizing for all.
I have three boys and food is cooked and consumed in fairly large quantities. My kids are not big on junk/takeaway type food but there are lots of pastas, casseroles, meatballs etc that I make on a daily basis and I find it all a bit exhausting, despite having a helper. Is anyone else in a similar spot and can you suggest recipes that your entire family finds appetizing and yet they are healthy and good for weight loss.
P.S. We made chicken breast and zucchini meatballs for dinner tonight and whereas the family had them in an alfredo sauce with angel hair pasta, I had mine grilled with some steamed broccoli and some tomato and corn salsa. Stuff like this which can work for both of us is really what I'm looking for I guess.

I would recommend the Trim Healthy Mama Cookbook. I don't follow their diet plan (it's a food combining plan - fats with protein or carbs with protein, but not fat with carbs), but their cookbook is fabulous. It is chock full of easy recipes that are family friendly and made in large quantities. I usually make a quarter of the recipe because I don't want that much food. Clearly, the book is written by women who have a lot of kids and need to get a healthy dinner on the table without spending all day cooking, shopping for exotic foods or spending the entire paycheck.
Some favorites I make repeatedly are Eggroll in a Bowl, Cajun Cream Chicken, Cowboy Grub, Cabb and Saus Skillet, Reuben in a Bowl, Lazy Lasagna and more. I make the single serve Nutty Noodles and Creamless Creamy Chicken almost weekly.

That's a ton of work. Teach some of the kids to help with planning, shopping, preparing and cooking.0
