Hey! I thought I'd start a thread for veggie-based meals and recipes. Especially so since fall crops will be coming in soon. (Helloooo spaghetti squash!). What are your best/favorite/interesting looking veggie-centric recipes? I'm more a fan of cooked veggies so if you have one of those (like a soup or skillet) i'd be super extra interested!

I've recently made loaded veggie cauliflower fried rice. Added some turmeric, cumin, and paprika to make it it's own thing. It's no replacement for real fried rice but with the right spices it stands all on its own:

I halved the oil and soy sauce to lower cals and sodium. Don't have a food processor but my 'slap chop' worked wonderfully!
