Overnight oats breakfast

Hi I'm looking for easy overnight oats breakfast recipes, preferably high protein but low in fat.

- 40g rolled oats ( 1/2 cup )
- 1 scoop of protein powder ( preferably chocolate)
* combine in a Mason jar and add 1 1/4 cup of water or milk )
* add 90g of finely grated zucchini ( squeeze excess juice ) to add volume
• I like to pop mine in the microwave for about 1 minutes then store in the fridge overnight0 -

Start with a base of 1/4 cup steel cut oats (or regular oats if you prefer) and add 1/2 milk (or more if you like). Then add one of the following combos.....1/2 of an apple chopped small, dash of cinnamon, tsp of brown sugar......or same recipe as the apple one, but use 1/2 of a pear or peach....they all work well. Or, toss in 1/4 cup of dried cranberries and a bit of brown sugar.....or raisins and brown sugar......also coconut is great with overnight oats.......Just try mixing lots of things and see what you like the best. I used small mason jars and shook them really well after I added all the ingredients, then left them in the fridge overnight.1

I just made this "recipe" today (ok I just slopped a bunch of stuff in a bowl with some oats) and it was delicious!
1/2 cup oats
1/2 granny smith apple
cinnamon to taste
1/2 Tbsp chia seeds
1/3 serving PB
cashew milk
100g greek plain yogurt
splenda to sweeten

For overnight oats, does it make a difference if you use quick cooking oats or not? I tried to make them once using regular oats and the texture was very off...really chewy.
Last night I tried making steel cut oats in my crock pot. I followed instructions I found on line and added 4.5 cups of water to 1 cup of oats and cooked on low for 8 hours. They tasted burnt. I guess I just don't have good luck with trying to do my oats the night before...0
