Where the hell has it been all my life?! See it constantly in the supermarkets in a tin near the corn but never tried it, but earlier this week I thought why not and am I glad I did. Other than saying how wonderful it is, those who have had it and use it often, what do YOU do with it? Is it part of your salad or just something you snack on etc.?

    I have chopped in in the food processor to make heart of palm cakes (seasoned like crab cakes) and have sliced it, marinated it, and then seared it off like scallops. I enjoy both preparations.
