Does eating more or less meals a day make any difference. I know its calories in vs calories out but I mean in other ways. Does it put more stress on your liver or digestion eating so much. I also that eating less food more often helps control blood sugar and energy crashes.

Since I have been eating better i notice when I have big meals of healthy foods I am bloated and uncomfortable so I thought a few smaller meals throughout the day would be better for me.

Just pay attention to your own body and how you feel on various eating schedules and frequency. We have widely varying preferences, if you're basically healthy it should not matter one bit.

For weight loss, it's always about calories. We have differing ways of adherence to our calories. Some want one or two big meals, some prefer to graze all day.

    Find your sweet spot.

It only makes a difference if it helps you stick to your calorie goal for the day. Some folks do better with 5 meals, some with 3, while others skip breakfast and lunch and only eat dinner and a snack. Find what works best for you.

FWIW, as you get used to eating less you will find that you do get fuller quicker. It will take less food to make you feel 'bloated and uncomfortable'. This is one of the issues I run into when I train for marathons. I have trouble eating enough calories. I have to eat almost nonstop on Sundays (I know, that sounds really horrible :D ).

And, what are 'healthy foods'? Eat too much of anything and you will gain weight and feel like crap.
