Vegetarian protein to have with pierogies?
I usually cook a couple of big dishes to eat throughout the week on my day off but just took a shift for a coworker so won't have another day off until next Thursday. Before MFP one of my go to meals for dinner during a crazy week was store bought pierogies with steamed broccoli, sauteed onions, and a bit of sour cream. I can make that work calorie wise but it's a little lacking in the protein department. Coming up with a vegetatian protein option that makes sense with pierogies is stumping me right now. Any suggestions would be much appreciated

If I was looking for fast and easy, I might try some Beyond Meat "chicken" strips alongside that or some Field Roast sausages.1

If your pierogies are made with butter and onions, I would pair it with cottage cheese. Actually, I would pair it with a hamburger , but if it must be something vegetarian, I would do cottage cheese.0

I would add a few spoons of cannellini beans--similar to the texture of the pierogi inside--or shelled edamame, for more of a contrast.0

Plain Greek Yogurt is a perfect substitute for sour cream. I use it on baked potatoes; it would be perfect with your pierogies and has a lot of protein.1
