Hi all.
A friend gave me some patty pan squash. I'm wondering if anyone has some SIMPLE recipes?
TIA!

Cut into sections, spritz with olive oil and sprinkle with the spice of your choice (I like curry powder or garlic). Roast at 450 until done to your liking - I leave mine in for about 30 mins but I like them nice and browned on the bottom.

I have a pile of these squash!
I think you could use it in recipes calling for zucchini or summer squash.

The second time I made this I replaced the spinach with fresh chopped tomato and we liked it even better.

I made something similar to this soup last week. I used wild rice instead of brown rice and added onion, celery, and carrot. I did not have sage so just used Italian seasoning. I added some Worcestershire sauce instead of soy sauce.

I slice them into "steaks" brush each side with olive oil and sprinkle each side with a mixture of salt, pepper, onion powder, finely chopped garlic and finely grated parmesan cheese and then I toss them on the grill. They are delicious!
