I don't think wheat grows in the desert. Cacti are dairy and wheat free though...
Raw, vegan desserts are a great place to start. They can be quite expensive to make, and generally massive calorie bombs though.
Other options might be meringues, with coconut cream and fruit. Sorbet. Gf cakes made with dairy alternatives0 -

Enjoy Life has a line of cookies and mixes that are allergen friendly.
I substitute plain coconut milk for milk, and coconut oil for butter in most recipes. If you google Gf and DF recipes, you can find almost anything.1 -
It's a calorie bomb, but for company, I always make coconut milk rice pudding and serve it with mango. It never fails to be a hit.
For every day, there are a lot of paleo mug cake recipes out there or low carb mug cake recipes made with almond milk and coconut flour.

Dark chocolate.

Key fact: They're made with coconut oil, which means they melt below human body temperature. They need to be refrigerated, which makes them hard to get.
Don't assume that because they're "healthy", they're less tasty. I don't care that they're healthy. They are the best chocolates I've ever eaten, with the possible exception of some chocolate truffles I got in a shop on Jackson Square in New Orleans, way back before hurricane Katrina. I take chocolate seriously, and in my 61 years, I've tried a lot of it.0 -
If you can get an electric ice cream maker, it's really useful for making your own sorbet-type desserts very easily and quickly. We literally just blend up soft, ripe fruit (and spices, if we want), or cooked, harder ripe fruit (like apples) and pout them in the ice cream maker to make a very healthy sorbet. If the fruit is sweet enough, no sweetener needed, it's just pureed fruit, basically, but MUCH tastier as a sorbet. :-)
You can make coconut milk based ice cream, as well.
A kind of Thai rice pudding is nice. Get Thai black rice (it looks dark, dark red, available at health food stores and Asian markets), and make it with water like normal, then mix it with mashed ripe banana and blended up dates, water if needed, and bake it.
