Just have a question for you guys or any other knowledgeable people
I've recently been reading about resistant starch and since you guys track your blood glucose levels I thought you might have some insight.
When you take potatoes or rice and cook and cool them does it change the impact on your glucose levels. Does the ripeness of fruit, like bananas or freezing and defrosting bread effect anything. How about how potatoes are cooked?
My understanding is foods effect different people differently but I was thinking you guys might have some insight

I haven't noticed a difference. If there is one, it is small for me.
Now skipping the banana and potato and having a bit extra nuts or steak works very well.0
