Cauliflower potato cakes

I would think you might be able to do one if you make 'cauliflower rice' - basically it's shredded until the size of rice - and mix it with a binder, like eggs, perhaps. Add in some chopped green onion and salt.
For cooking, if get an iron skillet and heat it up to med/med-high, while heating up an oven to 350-400 F. Then, when pan is hot, fry the cauliflower cakes for just a minute or two on each side, until lightly browned, and then put the iron skillet into the oven and bake it until done.
Not sure how that'd work, as i haven't made it, but I think it could do alright.1 -
