Thoughts on logging this challenge

I work on the inn side of an upscale inn and restaurant. We are preparing to re-open our restaurant after months of renovations, etc. With the re-opening comes a new menu, and, today, staff gets to taste everything. My dilemma is logging today. Short of asking chef for the recipe and weighing everything I eat (and we're talking bites of things, not entire course), I'm not sure how best to go about this. Obviously, I can find the closest thing possible on MFP and go from there, but I wanted to see if anyone had some other stellar ideas.

    guestimate based on whats in the database - there are lots of chain restaurants with information in here. then add 100 cals quick add to cover yourself.

    How many things do you have to sample? It might help to go by bites. I don't know what the food will look like, but this might help. Adjust the calories if needed.

    1 bite of salad - 5 cals
    1 bite of meat based dish - 15 cals
    1 bite of carb based dish - 20 cals
    1 bite of dessert -50 cals
