Hi, I’m looking for low carb breakfast ideas which ideally I can prep on a Sunday and it will last me through the week and not need to freeze in between.

I’m sick of bacon and egg muffins so I’m just looking for ideas / juices etc.

Must be low carbs though

I'm a lazy kitten. I hardboil eggs and eat them with just salt or maybe garlic powder if I'm feeling wild. If I'm feeling even lazier, I microwave a (vegetarian) sausage patty and eat it with maple syrup or apple sauce. Sorry, apple sauce is probably not low carb.

I really like cottage cheese and make all sorts of things with it. If I'm in a fall mood I'll add cinnamon, walnuts, and honey. Sweet mood and I'll and craisens and honey. I tried PB2 once in cottage cheese and it was.. uh.. interesting.

I wouldn't prepare any food and keep it in the fridge for a week, perhaps with the exception of hardboiled eggs.

Just to clarify I meant prep Sunday night and last through work week... you look in great shape - what’s you convenient food prep breakfast go to?

I would try to switch up how you prepare your eggs, I even make deviled eggs when I can. Low carb protein shake with nuts is another idea when I want something different. I try to use different meats too - sausage, ham, etc. Omelettes are a good idea also. There are some low carb breads you can try too if you want to be a breakfast sandwich, or avo toast with tomato and egg if that's something you like too!

I haven't tried these yet. Going to the store today to get the ingredients. These you can freeze and just pop in the toaster. I'm going to switch out the cottage cheese for Greek yogurt just because I don't care for cottage cheese. I will add a little more oats though to get a thicker consistency. Also, I will eat mine plain or with one teaspoon of some homemade fig preserves. (I don't have to have mine too sweet).

I just mix protein powder into plain greek yogurt. I don't do it on Sunday though. Just the night before.

    I still wouldn't do it.

I don't eat breakfast... Easiest prep in the world.

I don't always want "Breakfast food" so a lot during the weak I do just some meat and cheese, sometimes in a wrap, sometimes by its self. But I generally eat a lighter breakfast (read under 300cals) so if You want a heavier one this may not work for you. Otherwise I do agree boiled eggs are easy and keep well.

I scramble hubby a batch of eggs and sausage patties or bacon on Sunday and alternate that with overnight oats (not low carb) or greek yogurt throughout the week. He's never complained about the food going bad. I don't eat breakfast...a cup of coffee on the way out the door is easy and requires no prep.

I haven't tried prepping these myself, but I did see a blog where they used cloud bread rather than regular english muffins for freezer breakfast sandwiches.
