Vegetarian burrito bowl recipe

Hi everyone,

Having a bit of a struggle trying to figure out a recipe and I would truly appreciate any thoughts or help! So I love Mexican food and I was thinking that I could make a burrito bowl sometimes for work. However, I am unsure of how to make it ahead of time without it becoming soggy.

Here is what I would ideally like in the bowl...

-brown rice or quinoa
-kidney beans or black beans
-corn
-salsa
-greek yogurt plain (instead of sour cream)
-salsa
-shredded cheese
-guacamole

However, I can not see how I would make this and not have it go soggy by the time I eat it at lunch at work. I was thinking of buying those small Taco Dip ready made packs for parties which already has layers of cheese, guac, salsa , and sour cream in there and possibly even the refried beans. It's a small box and I figure I could put the dry ingredients (brown rice, beans, corn, ) in one container and keep the taco dip container in my fridge at work and then spoon 1-2 tbsp on top of the dry ingredients and it would be ready to eat.

any thoughts on this? I know it's not the cleanest meal to eat in terms of nutrients and calories, but I am always looking to go out to eat for lunch and i feel like this gives me some control (home made for the most bit, healthier as it's brown rice and it's much cheaper than buying every day.

Any tips or thoughts would be welcome. I really like the Weight Watcher Smart Ones Sante Fe meals and I think this is a cheaper alternative.

    You can use mason jars and re-cycled fruit cups to keep ingredients separate. Put beans and corn in the bottom of the mason jar, add rice, cheese. Use the fruit cups for guacamole, salsa and yogurt. If you put salsa on top of the guac it will probably stop from browning.     I did basically this for lunch today. Put rice, black beans, & taco meat in a container. The seperated the cheese in a baggy. And lettuce/onions in a second baggy. And salsa in a small container.

    Microwaved the rice, meat and beans for 1 minute. Added cheese, did 30 seconds more. Put the lettuce/onions and salsa on top. Nothing was mushy. It's a pain to have everything seperate, but it was really tasty.

    same for both of these. i roast jalapenos and blend with greek yogurt and lime, add in pico de gallo and take that in one container, the tvp taco portion (which is mixed with spinach and olives) in another container and a bag of cheese. i also take light tortillas as i prefer my burritos more burritoed and less bowled. it's a lot to take at first, but i usually have enough for a few days and leave it in the fridge at work.
