Anyone have really good spaghetti and chili recipes for vegans? The only two foods I’m really missing right now. I’m macro counting so I can have the data and carbs! Just need a little help from my friends :)

    Spaghetti: most spaghetti (pasta) is only semolina (wheat), water, and salt, so no problem there for vegans. I'm guessing you're asking about a substitute for a traditional meat-and-tomato sauce? You could just omit the meat (and cheese, if you use it) from a traditional recipe (or start with a jarred or canned tomato/pasta sauce that doesn't include meat or cheese). You could also add mushrooms to give it a meaty "feel" and umami flavor notes, or ground vegan crumbles from the freezer or refrigerator section of your grocers, or make your own crumbles from TVP, or Italian-style vegan "sausage." Good veggies to add if not already in your recipe or jarred sauce include onions, sweet peppers, and artichokes, as well as garlic and olives (assuming you like those ingredients). I would saute onions, peppers, and garlic first rather than just dumping them into your sauce raw.


    Chili: Again, omit meat from your favorite recipe and substitute some combination of legumes (kidney beans are traditional, but you can also make black bean chili, white bean chili, lentil chili, or whatever you like), vegan crumbles from the freezer or refrigerator section of your grocers, or crumbles made from TVP. I like lots of veggies in my vegan chili: onions, sweet and hot peppers, tomatoes, plus mushrooms if I'm using lentils (I don't know why, but to me the 'shrooms don't seem to "go" with a kidney or black bean chili).
