No bake chocolate oatmeal bars = TO DIE FOR (and clean!)
MAKE THEM NOW, OMG.
Take one cup natural peanut butter (I used crunchy, but creamy is good too), half cup honey, and half cup coconut oil and melt them together in a pot or large skillet pan on low heat, stirring constantly.
In another bowl, mix together two cups old fashioned oats, one cup coconut flakes, and half cup dried cranberries, raisins, or nuts. I used cranberries.
When the peanut butter/honey/coconut oil mixture is all melted, stir in a teaspoon of vanilla. Then stir in the oat mixture and add 1.25 cup dark chocolate chips.
Stir this all together til the chocolate is all melted.
Press the mixture into a 9x13 greased pan and shove it in the fridge til it hardens.
I sliced 20 bars and they are about 285 calories apiece - so, definitely a *little* up there. But they are a treat, and they are a clean treat
