This piqued my interest, so I went out searching. This one has good reviews: http://www.yummly.com/recipe/No-Flour-No-Sugar-Oat-Walnut-Fruit-Muffins-Food_com-72908?columns=4&position=5/36
I think I'll give it a try, but it might be a while. Just remember that not all oats or baking powder are gluten free,so watch your ingredients there. I hope this helps, or at least brings other recipes. Good luck!0 -
I live on these muffins.

I use egg substitute, plain non-fat yogurt, and 4 tbs of Truvia baking blend. 65 calories each!
I've added strawberries, pretty good. Used insant oats, works fine. Skipped the blender, tastes great. Used applesauce, tastes great. I make a batch of these every week, a double batch if I have bananas going ripe. I keep them in the freezer and microwave as needed.0
