Where can I make a precise calculation of the % or macros that I should be consuming daily? I have tried many sites and for some reason they hype up my Carbs. I know my body well and have come to realize that Carbs and me, don't play well. Yes, I'm talking about brown rice, sweet potato, the complex carbs. Simple carbs? Don't even dare to get close by them. Also, why does MFP keep on changing the ratio of my macros?

You can set macro percentages in "Goals" - on the free web version they are calculable in 5% increments.
Your percentages won't change, but if you add in exercise, the amounts of everything will change, because MFP recalculates your calorie intake and gives you additional calories as fuel for that exercise. It's not a percentage change, but an amount change.1 -
