Why did I not know that scallions make eggs so much better??

I mean, I like eggs normally but I made a quiche this week for the first time (Discovered I am awesome at quiche - lol) and then I prepped egg breakfast sandwiches. Added chopped scallions to both and they were super tasty.

    Herbs and spices :). Sometime, try some tarragon on fried eggs.

    I honestly don't know what tarragon tastes like but I am game! Trying to up my cooking game. I once made lemon bars and forgot the lemon ... Lol ... so I tend to stick to tried and true faves. But this week I made a quiche and a shrimp and scallop paella which both turned out great (and I made as low cal as I could). But dang, saffron (for the paella) is spendy!!

    A few years ago I had egg salad made with scallions from the deli counter where I work. So simple but sooo delicious! I will NEVER make it any other way!

    There's a reason that the classic french omelet is usually served with a sprinkling of chives (which are basically just kinder, gentler scallions). It's a classic combo.

    In general, scallions tend to make everything better. I love it in my noodle soup.

    Basil is another 'universally good' herb when you have it fresh. It works in tons of stuff but people often forget that it works just as well with eggs as it does with pizza/pasta. Ham, brie, and basil is another classic combo - great on it's own, even better on top of a burger or egg sandwich.

    I had a scrambled egg dish at Starbucks, it had mixed seeds in it, mainly pumpkin seeds, along with spinach and tomatoes. It was very tasty.
