Which Fat?

I was wondering, in your food diary do you track fat? If so what kind do you track? I was just traking fat, then I saw that you could track trans fat, polyunsaturated, monounsaturated.............. and some others. Just curious what you track and why you chose that one so I can make an educated decision which one to do!
