I need ideas for work lunch.

Hi! I’m looking for a healthy dish, I like the lunches to be heavy and dinners to be light. I love meat so include that. I’m tired of the “Chicken and Vegs” for lunch.

    There's a WW receipe that's kinda like a stew/one pot dish. Serves 4 of 4 chicken breaststroke, 2 cloves garlic, 1 onion, 1 leek, 1 celery, (extra veg to taste/bulk out dish ) 175ml red wine, 400g passage & 110g pearl barley.
    Or pasta with squash & salami, or chicken cacciatore with rice. I tty to take bulk cook to take meals to work as I don't have time to cook when I get home.
  • This recipe is a family favourite.
    You can batch cook and freeze meals.
    Tastes better the next day.


    CURRIED SAUSAGES

    To make sauce first:
    60 Gm butter
    2 tablespoons yellow curry paste
    1 tablespoon crushed garlic
    1 cup plain flour
    1 teaspoon tumeric
    1 cup skim milk
    1 cup chicken stock

    In a medium saucepan add butter and curry paste. Stir constantly. When butter is melted add flour, tumeric and whisk for 1 minute. Add garlic and milk. Whisk constantly. Add chicken stock a little at a time until a gravy consistency.
    Turn off heat.

    10 thick sausages (Cut into threes)
    1 large brown onion (cut in half and sliced fine)
    1 celery stalk (grated)
    1 large carrot (grated)
    1 large zucchini (grated)

    In a large frypan add a little olive oil. Fry sausages and onions for five minutes on high.
    Turn down to lowest setting.
    Give sauce a good whisk and pour over sausages. Stir well and add all other ingredients.
    Mix well and simmer for 1 to 2 hours.

    Serve with mashed potatoes or rice.
    Serves 4.

    Search the boards for "show me your meals" thread. It is chock full of ideas. Not knowing what you like/don't like, it's hard to give you recipes.

    This week I made black bean soup, lentil/mushroom meatloaf and will make a roasted chicken later tonight. I also made spicy italian sausage along with a big skillet of broccoli rabe.. aka rapini. Add pasta if you like, but I ate it alone with some parm cheese. Sausage is pretty calorie dense, but by adding the rapini, it gave me a large volume of food and I only needed a little bit of meat.

    Do you make soup? It can be really filling. Full of vegetables and meat if you like. It can be a whole meal or a starter.

    I'm a big fan of having a baked potato or sweet potato with whatever I'm eating at lunch. There are many times I'll add ground or shredded meat to a potato and eat it with a vegetable such as green beans, broccoli or asparagus for a fairly well-balanced lunch.

    Baked potatoes are a good make ahead with all different toppings. Broccoli, shredded meats, cheeses, cottage cheese, low fat sauces, chili.....
    Chili and cottage cheese are my fave go to meal.
