Mash the eggs with EVOO (the fresher the better), salt, and black pepper. Spread the mixture on bread, sprinkle with paprika, lay some thinly sliced dill pickles on top (the thinner the better) and that's it. I used to eat this often as a child. Too bad that for the best effect you need to use a lot of olive oil which I can't always afford calorically.6

My mother would slice them on top of little dishes of cooked frozen spinach when we were kids to get us to eat our spinach.
She also would occasionally put 2 or 3 hard-boiled eggs inside a meat loaf (with the long axis of the eggs parallel to the long axis of the meat loaf), so that most slices of the meat loaf would get a slice of hard-boiled egg.
I wasn't super crazy about either dish, but tastes vary.
I think sieved hard-boiled egg is often used as a topping for cooked vegetables, particularly asparagus, and when serving caviar.
Personally, I mostly just eat them with salt, deviled, or in egg salad.1 -
This is a slight aside but I recently discovered that my Instant Pot makes perfect hard boiled eggs in about 6 minutes -- plus cool down time. No pots boiling over so can walk away. I never liked making hard boiled eggs before but now I cook them by the dozen. I mostly just like them with salt & pepper.1

When I'm too busy to watch eggs I just submerge them in boiling hot water (about a liter per egg), covered, and come back to them an hour later. No cooking necessary and no chance of overcooking the yolk.

I love mine with curry powder. I also like to slice them and drizzle banana pepper vinegar over them. Tastes like low-calorie egg salad.
Something else, I mash them up with an avocado and mild banana pepper rings and put it on whole wheat toast. Bam, delicious egg salad with clean foods.0 -
try making an egg salad with mashed avocado and spread it on a piece of toast. Yummy!1

I cut mine in half, put a bunch of cracked black pepper on top, and if I am craving some more flavor, a bit of yellow mustard. It kinda tastes like egg salad, but without the extra calories from the mayo2

Hot sauce!
Pickle them (red beets/onion/vinegar/a little sugar/horseradish)
Toast + ricotta + egg
Cobb salad (or added to most all salad)
On a buttered English muffin
Crumble on pasta or risotto
Liven up basic deviled eggs:
buffalo sauce + blue cheese + a little mayo, bacon bits would be cool here too
hot curry powder + turmeric + mayo or avocado
Dijon + mayo + cayenne + diced ham or prosciutto
horseradish mustard +mayo or avocado
kalamata olive & feta + mayo1 -
I never got into them, but eggs boiled in tea are a thing.
If you're into EXTREME boiled eggs, check out century eggs.
I like mine chopped in a garden salad. I prep on Sundays and they're still good for lunch on Fridays. When mixed with a bit of feta or avocado, they make salads SUPER creamy and rich feeling.
When plain, I just eat them with S&P and tomato wedges.

With Smoky Paprika hummus ... I get a local grocery store brand in my area. I have high cholesterol so I don't eat the yolks. Only need about 1 tablespoon of the hummus (1/2 serving). It's flavorful so a little goes a long way.1

Ha! That's clever...making 'deviled eggs' with hummus in place of the deviled yolk.1 -
I mix mine with a little tuna. i also roll it up in a lettuce leaf but it is also good on crackers etc0

They are very good served whole in a thin soup. Hard boiled whole quail eggs are often served w pho at restaurants.
