I also have UC. It is really hard to give any blanket dietary advice because if there's anything I've learned it's that no two people with UC are the same. It is not a fun disease.

I've found out quite recently that the stomach problems I've been dealing with for months may be the result of gluten intolerance/celiac disease. Following to see if anyone has any advice!

Are you just in for the tracking?

Foods that work for those with UC/Chrons/etc will not necessarily be gluten free or work for celiac disease. They are two totally different families of issues.

OP - my dad has Chrons so I've watched him go through issues for years. He had a horrible flair up about 5 years ago and was really sick for almost an entire year, in and out of hospitals/surgeries. He had an ileostomy for about 8 months and was fortunate enough to be able to have it reversed after giving his lower GI a chance to heal. For him, alcohol caused really, really bad reactions. He eats minimal dairy, and the least amount of processing the better. He and my mom have adopted a plant based lifestyle, with minimal animal products. It seems to be working, but they still eat chicken and fish on a semi-regular basis. He definitely doesn't eat a whole lot of raw veggies though. Even though they eat a lot of veggies, most things are cooked as it is easier for him to digest, causes less pain. Also, he doesn't eat a whole lot of broccoli, brussel sprouts, cauliflower, etc - the ones that are really fibrous and hard to digest. If he does, they're always cooked. Hope you feel better soon!
