Skinny chicken tortilla soup

I made this for dinner tonight and I thought it was delicious enough to share!
The recipe is as follows:
-12ounces boneless, skinless chicken breast
-1 can diced tomatoes
-1 can yellow corn
-1 8oz can tomato sauce
- 4.5oz can green chilies
- 3 cups low sodium chicken broth
- 1 packet taco seasoning
- 2 gloves garlic, minced
- 1 onion, chopped
- 1/4 cup cilantro
- Salt/pepper to taste
I boiled the chicken and shredded it before putting in the crockpot
I then sautéed the onion and garlic for a couple of minutes and then combined all of the ingredients in the crockpot and cooked on high for 3 hours!
Once it's finished I served with shredded cheddar cheese, Greek yogurt (in place of sour cream),sliced avocado, and crumbled tortilla chips on top
All together the soup was 243 calories per serving with the ingredients I used and I set the recipe to serve 5. The calorie count doesn't include the toppings but even then those don't add too much!

This sounds delicious, though I'll have to doctor it a bit. Canned stuff makes it hard for me to stick below my sodium goals.1

Yes it is a bit higher in sodium than other things, but I'm sure it will be super easy to modify by using fresh ingredients (it'll probably taste more delicious with all of the fresh ingredients honestly!).0 -

You can probably find most of these canned foods in no salt added versions. I think just the green chilis and the taco seasoning are not available as no salt added. But if you can sub a homemade taco seasoning as well, then all you'll be facing is the sodium from the canned chilis, which will be quite reasonable when calculated for the entire recipe.2 -

New to the community- I too need to manage sodium levels & will be definitely giving this a try using no salt added options
If you can find it Mrs Dash makes seasoning packets for Taco (no salt) as well as other great seasoning packs (meatloaf, stew, chili, ranch dip - there are others)0
