Olive oil...extra virgin olive oil. Best. You can cook with it, add it to salads, and it's healthy. It's a monounsaturated fat, and that is good for keeping bad cholesterol (LDL) down and the good cholesterol (HDL) up. Polyunsaturated fat is also good.
Avoid anything with trans fat. Also saturated fat should be low.

Depends on your eating/lifestyle choices. My personal preference and what fits my needs is Coconut oil (fav), avocado, or olive oil in a pinch. Post what your eating style and goals are. Are you low carb? Standard diet? Vegan? Knowing would give people more wiggle room to help you because there isn't one right answer until we know more about you :)

Simple: Polyuns = good. Monouns = good. Sats = not quite so good. Trans = BAD BAD BAD.
