"Clean Eating" protein bars

Ingredients
Dry ingredients:

1 cup Whey (or whatever type floats your boat) protein
1/2 cup Spelt flour (or whole grain flour of your choice)
2 cups rolled oats
1/2 cup oat bran
1/2 cup flax seed ground
1/2 cup wheat germ
1 teaspoon sea salt
2 T. cinnamon
1 T nutmeg
1/2 cup sucanat (or turbinado sugar)--you could probably use Stevia as well

Wet ingredients:

1 2/3 cup plain lowfat yogurt (or make yogurt cheese for less chewy bars)
1/4 cup coconut (can be omitted)
1/4 cup healthy oil of your choice (I used safflower)
1 T olive oil (for coating hands when mixing)

Optional ingredients NOT included in this recipe for those of you that would like to up the calories and make this a meal:
Dark chocolate
Nuts
Pumpkin seeds
Nut Butter (or powdered peanut butter would work)

Directions
1. Preheat oven to 350 degrees F. Coat a 9x13 pan with cooking spray.
2. Combine all dry ingredients in a mixing bowl
3. Combine all wet ingredients in separate mixing bowl
4. Add wet ingredients to dry. Use your hands to mix them well. Coat hands with olive oil to prevent sticking.
5. Place mixture in prepared baking dish. Press it down so it's even. Bake on middle rack for 15 minutes.
6. Remove from oven and cool. Cut into bars (I cut into 16).
7. Place bars on cookie sheet lined with Silpat or parchment paper. Bake an additional 15 minutes. Remove from heat and cool on rack.
8. Store in airtight container, in refrigerator, or they can be frozen (I generally keep enough out for a few days and freeze the rest to prevent them from spoiling).

I've made them with the dark chocolate which was tasty, and also pumpkin seeds and almonds (again, very good). Also, you can also make 'yogurt cheese' which will be thicker, but I totally forgot to make it last night, and plain yogurt works just fine. The bars just come out a little chewier.
