That's a really good question! "This" is a little complicated.
Sometimes, "this" is a pronoun. Specifically, it is a demonstrative pronoun. In the sentence "I like this," for example, "this" serves as the object of the sentence, taking the place of a noun phrase.
Sometimes, "this" is an adjective (specifically, a demonstrative adjective), as in the sentence, "I like this strawberry." "This" explains what the following noun refers to (i.e., this strawberry rather than that strawberry).
Finally, "this" is sometimes an adverb. For example, "I've never eaten chocolate this good." "This" modifies the adjective "good."12
