Late nights and early mornings - quick dinner ideas?

Hey everyone!

I sometimes don't get home till around 7:30, or later, and still need to eat some kind of dinner (and then get up again around 6am for a run, shower then off to work)

Any recipe ideas for a quick something that is nutritious and healthy, but also quick and easy? I don't often have time to cook, which sucks because I like to cook and made good food, so I don't often have a lot of left-overs in the fridge.

I mean...there's only so much chicken one can eat before getting sick of it :explode:

    My go to quick meal is poached eggs on toast, with a little bit of cheese on top, and some sautéed spinach or green salad!

    Burritos!! We'll cook or microwave some kind of meat, clean the veggies out of the fridge along with some lowfat cheese and sour cream. Microwave the tortillas and your done!
