A vegan is likely going to go over the carb goal, it doesn't necessarily matter. Your macros are what work for you, they don't need to be the MFP default macros, nothing magical about those. That said, I looked at a couple days of your diary and you were over on carbs because you were way under on protein and fat, so focusing on getting in more protein and fat is the solution.

Good vegan sources of protein are: all kinds of beans and lentils, including soybeans (tofu, tempeh, edamame, black soybeans), peas, chickpeas. Also seitan if you like it, various fake meat products, and vegan protein powders. Beyond that, you can get it in your diet from a variety of foods that don't have a lot on their own, but will add up: grains and pseudo-grains (including quinoa), nuts and seeds, lots of vegetables (greens, broccoli, so on).

Good vegan sources of fat are: nuts and seeds (again, more of a fat source than protein, in fact), nut butters and nut milks (at least if homemade), olives and olive oil, avocados and avocado oil, anything coconut (inc coconut oil).

I would focus on getting enough protein and fat, not limiting carbohydrates. Once you're getting enough of those, you can generally just let the carbohydrates end up whereever they will.
