Thanksgiving Spaghetti

I get a kick out of cuisine mash-ups (think Thai burritos or Mexican pizza), so I decided to get creative with Thanksgiving leftovers. I made up my own recipe and it was so much fun I wanted to share it with someone.

First I made cranberry "marinara"; sauced fresh cranberries, diced tomatoes, onions sautéed with coconut oil. I hoped the coconut oil would be enough sweet to balance the sour of the cranberry, but it wasn't, so I added some red wine. I tried really hard to avoid adding any sugar, but ultimately had to add a little bit to make the sauce taste good. Then I tossed leftover turkey with a sprinkle of ginger. Last I mixed it all in with sweet potato noodles. I really enjoy cranberry, so this was a fun, new way to eat it!

One serving is as pictured (the recipe made two). Had I known it would turn out to be so big, I would have halved it again.
