Cauliflower Potato Leek Soup - 145 calories per 400g serving!
Just made a big heaping pot of this last night and it's so delicious, filling and creamy. I added all the ingredients to the Recipe Builder in grams then weighed the full bowlful to calculate the calorie count. If you make it yourself, feel free to play with proportions to suit your needs.
1. Thoroughly wash leeks and chop into small segments. Sautee with garlic in butter in stock pot.
2. Add remaining ingredients (except sour cream, salt and pepper), bring to boil. Reduce to simmer for 30 minutes.
3. Let cool for 10 minutes, then pulse in batches in blender. Be careful blending hot soups; only fill halfway and allow steam to escape. Google for further safety instructions or wait until soup is fully cooled (or use immersion blender).
4. Return blended soup to stock pot and whisk in sour cream. Add salt and pepper to taste. Enjoy!
- 500mL Fat Free 1% Sour Cream (full container)
- Two 900mL Chicken Broth containers
- 344g Russet Potato (2 potatoes), diced
- 14g Garlic (4-5 small cloves), chopped
- 40g Butter
- 500g Leeks (4 leeks), diced
- 800g Cauliflower (1 head), diced

For my "Servings", I just listed the total grams, which ended up being 3,572g. That works out to 8.9 servings of 400g.
Here's the calorie counts for each item:

Russet potatoes - 265 calories
Garlic - 21 calories
Butter - 282 calories
Leeks - 145 calories
Cauliflower - 184 calories
Grand total = 1292 calories (divided by 8.9 = 145 calories)
I went by the labels for the broth and sour cream. And the veggies are USDA entries.1
