Ok Question. I have lost like 6lbs this week by eating protein veg and fruit. Today I ate out at Mexican restaurant had a little chips and salsa a taco, rice and beans. I was so full afterwards I never want to eat it again. So my Question is, will I gain weight from this one meal out?

Jealous! I love Mexican food and don't often get it here.
You'll likely see a small gain tomorrow, but it might be salt and water retention. BTW 6 lbs is very fast for one week.1 -
It all depends on how many calories you burned today and how many were in your meal. It's all about calories in, calories out and the math that follows. It will likely add more calories to your total consumption though.1

I have a lot of weight to lose, which may be why I lost so much in one week. Plus o drink at least 68 ounces of water per day. I worked really hard this week to eat right.0

the scale may creep up from water retention but as long as you're in overall calorie deficit for the week you should continue to lose.2

You lost weight because you ate less calories than you burned. It was not the protein, veg, and fruit that caused your weight loss, it was eating at a calorie deficit.
Taking that into account, if you ate at the appropriate calorie level for the day, even eating mexican food, you would still lose weight. The loss may not be apparent immediately as restaurant food is usually quite high in sodium, so it may result in retaining more water and that will increase weight. It will not, assuming you were still in a calorie deficit, put on fat. This water weight increase is probably made more likely because of your 6 pound loss in the week as much of that is likely water weight not fat loss.
The take home from all this is 1) Watch your calories even when eating out 2) Don't sweat water weight variations.2 -
You are eating under 1200 calories, sometimes under 1000 *unless you did not log everything*
This is dangerous. Don't worry about the mexican food.4 -
I hope you're forgetting to log a lot of food. If not you are seriously undereating and I highly doubt that you are getting enough overall nutrition as a result. It is absolutely possible to become malnourished while overweight.
And no, Mexican food within you calorie limit will not stop your weight loss. Take care of yourself, you only get the one body.3 -

It is a support forum, but if you are eating 1000 calories or less, that is dangerous ... and we'd like to encourage you to stick to the 1200 minimum MFP prefers.4 -

Think of it this way, Mexicans just think of “Mexican food” as “food”. It’s macros, micros and calories, just like everything else.2

Not sure how much weight you're trying to lose,but the usual recommendation is 1 lb per week. Don't expect every week to be 6 lbs, or you will be disappointed.
How many calories were in your Mexican meal? Weight loss doesn't depend on the type of food you eat, but on the amount of calories in it. Your overall Calorie Deficit per day is derived from your Calories In (what you eat) and your Calories Out (what you burn through exercise).1
