How quickly do cholesterol levels rise?

Just curious to find out if levels of bad cholesterol rise quickly after a meal or if its over a longer period of time like a few weeks.
Health associations talk about a 'diet high in' certain bad foods that should be avoided or consumed in limited amounts. To me the term diet means over a period of time.
I eat fairly lean meals and occasionally treat myself, try and limit the amount of dairy products like cheese and cuts of meat high in fat - ultimately I just try to stay healthy, lean and exercise a little everyday.
I don't fret over the subject, it's just nice to get views from other sources other than scare stories from news sites!
