Other than reheating what are your objectives? Are you looking for low-carb, high protein? Do you have gluten concerns? How many calories per serving? Do you have a high-fiber preference? What about spice/ heat? Finally, what type of cuisine is your favorite?1

I just cook double or triple of what I normally eat...extra rice, extra chicken cut up for salads, sadwiches, wraps. Portion leftover dinner for breakfast and lunch the next couple days. My favorite is oven roasting a bunch of my favorite vegtables so I can stuff them into wraps or eat them reheated from a bowl with chicken and rice.
I cook a soup or two during week and portion and freeze for later. Casseroles are always good, giant, and are good reheated. Some are high calorie so I usually swap ingredients or eat a smaller serving.
Overnight oats are good sitting for 3 days. I make 3 servings at a time I grab it and eat it cold or heat it up.
Be prepared to by a lot of heatable serving containers with lids.

I find that cooked dishes served in a sauce or liquid store very well in the fridge and freezer. Fresh fruit and veggie dishes generally don't freeze/fridge really well. Here are my favourite things to meal prep:
Casseroles, curries, stews, soups, chili, pasta dishes, meatballs, quiches, pies (sweet or savory).
I just go on my favourite recipe sites and find recipes that freeze well.1 -
I do quite a bit of meal prepping. For breakfast, I use a small bag of frozen California Blend veggies. Heat them in a skillet with a little butter, throw in a handful of kale or spinach, and then add 6-8 beaten eggs. Scramble till almost done and divide into containers. Heat in the microwave about 90 secs, then add small amount of cheese on top and micro another 30 seconds. I eat mine with Sriracha sauce and tons of black pepper...and these are really tasty. I am doing low carb, so they fit perfectly on my plan.

I do a lot of simple meals for dinner...sometimes my hubby doesn't eat the same stuff as me, so I make separate meals....I tend to use a lot of frozen veggies or I roast fresh ones....and then add the meat. These are Spicy Baked Chicken Legs....Garlic Herb Salmon and Italian Sausages, along with different veggies...
