    here's some ideas:
    tuna with flax crackers
cranberry walnut salad with feta cheese
premade chicken (corn tortilla has no gluten) enchiladas with side salad
turkey and cheese rolled in whole romaine lettuce leaves
shish kabobs made with watermelon, cantaloupe, and grapes
broccoli salad with roasted almond chips and balsamic vinaigrette
homemade vegetable or chicken vegetable soup with rye crackers- just heat and eat

I'll usually pack pistachios, or peanuts, (in the shell so it gives me something to do and I don't shove it in my mouth so fast) or fruits. Sometimes I'll pack some hummus and pita bread too and cheese and crackers.

My lunches this week have involved...

    - Egg salad sandwich on homemade white bread (omit or sub w/ gluten-free bread/tortilla or lettuce leaf)
    - Chicken salad made w/ shredded leg and thigh meat (yay for slow-cookers), plain Greek yogurt, celery, and Granny Smith apple chunks; the recipe I found also called for walnuts, but those are expensive and I don't care for nuts in my chicken salad
    - Seedless red grapes
    - Celery sticks
    - Peanut butter
    - Plain Greek yogurt with honey, cinnamon, and peanut butter
    - Veggie chips
    - Pita chips and medium salsa

Not all at once, obviously. But a combination of three or four of those things.
