Make ahead breakfast casseroles for Christmas day?

Anyone have any good ones to share? I would like to make it on Tuesday or Wednesday and store it in either the fridge or the freezer for Christmas morning. I need to feed 8 people with it and I need to be able to make it gluten free. I can use GF flour or corn starch in place of regular or GF bisquick, but prefer not to need to substitute for bread or condensed soup. Thanks in advance!
