How many exercises should I do?

I’m going to start glute training again focusing on mass. I plan on training 5 days a week, 4 sets of 12 to start and working towards doing max weight...
I’m just not sure how many exercises I should do per workout and how long I should stick with one workout before switching up.

I would follow a program rather than just doing random exercises. Look into Strong Curves2
