Deer Summer Sausage

I have gone through the search for deer summer sausage and each one varies so much in calories/carbs etc. Anyone want to offer up an accurate count for me?

    How much fat did you leave in or add? I'd choose an entry that I thought had similar fat content and go with that.

    It varies wildly in the database because it varies wildly when you make it. Did you make it yourself? Create the recipe in the builder. Venison sausage usually gets cut with pork fat, so I'd want to create my own entry if I made it myself rather than try to guess.

    On topic: I ate some of my boss's homemade venison summer sausage this morning, and just logged the usda entry. I'm sure it's close enough.
