Mexican food-carne asada, rice and tortillas2

Roasted chicken breast dry rubbed with taco seasoning, served over slices of roasted orange and green bell peppers, 1 serving of black beans, and 1 oz of shredded cheddar... all piled up on the plate like a salad

Shrimp stir-fry on jasmine rice. Iced tea. One carefully-hoarded lebkuchen from Christmas for dessert. Yummers.1

Tuscan tortellini soup and fried risotto cakes (had left over risotto from the other night).1

Homemade split pea soup and homemade chicken noodle soup. Warms the tummy since it is so cold outside.0

Homemade falafel and hummus. Store bought pita.1

Bell pepper "nachos" - red bell pepper cut into chunks, with lean chicken taco meat on top and a little bit of cheese. Broiled until cheese is melty. Add avocado, pico de gallo, and a tbsp of low fat sour cream.3
