5 Ingredient Slow Cooker Enchilada Bake

This recipe is very easy and super tasty!

Ingredients:
1.5lbs chicken breasts
1 28oz can red enchilada sauce
10 corn tortillas
1 cup 2% cheddar cheese

Put chicken and sauce in the crockpot, cover and cook on high for 4 hours or low for 8 hours.

Shred chicken with two forks, cut tortillas into strips and add to crockpot with 1/2c cheese and stir. Top with remaining 1/2c cheese and cover and cook for an additional 40-60 mins on low.

Makes 8, 3/4 cup servings:

Per serving:
Cals: 231
Protein: 20g
Fat: 8g
Carbs: 20g
Fiber: 4g

    Ha! Good catch! The last ingredient is 1/2c of sliced black olives, which I don't like, so I don't add them. That's why I forgot all about them. Others might want to add.

    So there's 8 servings..that's basically 1 and a quarter corn tortilla ?
    There's no way I could stop at that..I love enchiladas waay to much..

    Good as a leftover in the fridge and scooped out for lunches. Easy and low calorie.....thanks for the recipe.
  • Just add some olives and you get so much more flavor! This is a delicious recipe!!
