If 2500 calories is a not-too-high deficit, do that. You can go with any diet plan provided it helps you sustain a calorie deficit.

Choose a diet plan that you enjoy and will stick wirh long term ie for life. Anything else and you will just end up giving up and regaining.

My suggestion is to play around with macros until you find what balance you enjoy while keeping you satisfied. Some find satiety in fats, others protein, others fibre and others starch. Rather than adopt a 'I can't have....' approach adopt a 'I am going to introduce ... to my diet this week'. If calories allow include those special treats you enjoy, just have them in smaller portions. Many go by a 80% fresh, unprocessed/lightly processed to 20% treats ratio approach as it helps them control binging. Some however find removing that particular food totally is best to prevent cravings. As itbis individual play around to find your best long term approach.

Read all the stickies here for great advice, especially ones regarding accurate logging. So many log inaccurately yet can not work out why they are not losing weight as expected.

You could try low carb or keto? If you go that route though its got to be a lifestyle change not just a "diet" or you will gain it back

My advice is don't do something with a name. You don't need restrictive rules to achieve your goals - eat at a slight deficit, and to maintain as much muscle as possible, consume sufficient protein and follow a progressive lifting program.
