Firm tofu recipes

My youngest kid loves tofu and will eat it straight out of the fridge. My eldest just declared he doesn’t like it anymore, right after I bought the giant Costco 4 pack, lol. I think he just doesn’t like the boring stir fry I usually make (he’s pretty picky, so he takes the tofu, veggies, and rice without the sauce. I would hate that too). So I’m looking for recipes for firm tofu that aren’t stir fry or agedashi tofu, which also wasn’t a hit here. Miso soup is a big hit and strangely they both like curried tofu with chickpeas, as long as they get plenty of naan. :D Any other ideas?

    I like to cut it into cubes or strips and just brown it up with a bit of soy sauce and Teriyaki and then eat it inside of a whole wheat pita pocket with some butter lettuce, grape tomatoes and a little bit of avocado Greek yogurt dressing (I make mine with Greek yogurt, lemon juice, mashed avocado and salt&pepper).

    Tofu Dill Salad (from vegan with a vengeance)
    1 pound extra-firm tofu, drained and pressed
    3 tbsp minced red onion
    3 tbsp vegannaise*
    1/3 cup fresh dill, chopped
    2 tsp dijon mustard*
    2 tbsp apple cider vinegar or fresh lemon juice
    salt and fresh black pepper to taste
    slices of whole wheat bread
    sammich fixins (lettuce, tomato and onion)


    In a large bowl, crumble tofu with your hands for about 30 seconds, until you reach a crumbly but still somewhat firm consistency. Mix in the rest of the ingredients through the pepper, then chill for about 15 minutes. Serve on whole wheat bread topped with your favorite sammaich fixins.

    *you can play with those amounts to fit your taste and/or caloric preference

    Here are my favorites:

    BAKED TOFU

    Press a block of Lite Firm Tofu to remove as much water as possible. Cut into 4 "patties". Spray a baking sheet with EVOO. Mix together 2 Tablespoons of soy sauce and 1/2 tsp liquid smoke. Brush onto both sides of the patties, sprinkle with salt, pepper, and garlic powder. Give one more quick spritz of EVOO. Bake at 375 for 20 minutes. Flip over and bake additional 15 minutes.

    This is good on its own or in the following two recipes I love:

    AVOCADO TOFU SANDWICH

    Baked Tofu (cut into patties)

    Avocado "mayo": Mash 1 avocado and combine with 1 T red wine vinegar, salt, pepper and parsley. Use this in place of mayo.

    Serve in a pita with a slice of tomato.

    TOFUNA

    1 batch Baked Tofu - roughly break them up and pulse them in a food processor. Put into a mixing bowl and add:

    1 celery stalk, finely diced
    1/2 cup vegan mayo
    3 tablespoons dill pickle relish
    2 tablespoons nutritional yeast
    salt & pepper to taste

    Mix thoroughly and thoroughly enjoy!

    Thanks all! Despite being labeled firm, this Costco stuff is actually more what I would consider medium and very crumbly. I’m going to try it as a ground beef replacement in chilli. Annoyingly, because it’s so crumbly I won’t be able to cut it up for the little one’s lunch-with the way he treats his lunchbox, it would be mush by lunchtime.

    For some silly reason I feel compelled to mention that we’re not a veggie family, though we’re aiming for more veggie/vegan meals.

    One of my favorite ways to eat tofu is to marinate in BBQ sauce for a while after pressing all the water out. Then I cut it into cubes and bake it. From there I use it in salads, wraps, by itself with sauteed veggies and mashed potatoes, etc.

    I throw it into my smoothies. It thickens it but doesn't make it taste any different.

    Scrambled tofu is my favorite and it's so easy to make! It takes just like scrambled eggs!
