If you're serious about it.. any recent college textbook on nutrition, from a library, used bookstore, etc.
For exercise, an exercise science textbook, and also a kinesiology texbook. A simpler approach is to read the study guide for a good trainer's certification, like NASM. Check Ebay for used copies.1
