Hey,
So we tried to cook the 5 spice chicken and it took over 12 minutes to cook through rather than 4 on each side and now the outsides are black... we dry fried the chicken- was that the problem? Anyone else tried this?

Without knowing your exact recipe, it's hard to say. Cooking time will depend on thickness of the individual pieces, so you will probably want to cut thicker pieces in half if you need to for uniformity.
When I make 5 spice chicken, I use skinless breast or thighs and bake it, covered with foil until the last few minutes to prevent drying out.1
