My daughter is vegetarian and is looking for seitan recipes. Does anyone know of any.

I've made it all kinds of ways -- boiled, baked, and steamed. I find the steaming to be easiest when beginning.

My personal preference is definitely steaming. When I bake it, it's too dry. When I boil it, it looks like brains. When I steam it, it's encased in foil so it keeps the general shape of what I want.
