Shrimp off the cuff! And leftovers too!

Try this for quick and easy, healthy too!
Cut a bunch of asparagus into bite-size pieces.
Chop 1/2 half an onion.
Slice three or four small yellow peppers.
Saute in one tablespoon real butter and sprinkle with garlic salt. Don't forget to cover so it becomes ala dente or cooked to your liking.
Stir occasionally while peeling thawed frozen shrimp, mine were already deveined. Season the shrimp with Creole seasoning or anything to your taste. Let those marinate while the vegetables are still cooking and start some rice that you like.
When vegetables are done add the shrimp until cooked through, very quick over medium heat.
Serve over rice.
Put the leftovers in a bowl you can freeze and voila... Mom's Meals To Go for later! Much better than the frozen stuff you get at the store with all of the preservatives and junk you don't want to eat!

This is one of my favorite go-to meals. Except I skip the rice and add mushrooms.1
