Casserole with which grain/starch?

I cooked a casserole ready meal of sorts yesterday, consisting of lots of chicken, veggies, and herbs. I spiced it up with more salt (Britain hates salt), more herbs, garlic and more veggies and whacked it in the oven.

Now I look at this massive bowl of chicken (9 small pieces in total) and veg, and the calorie information. Based on that half of this would fit perfectly into my calorie allowance, however, I'm not a meat eater. So I'm thinking of eating a third of it with something else. Plus I'm a grain/starch eater anyway.

Any idea what this something else could be that fits this? Cooked potatoes? Rice? Couscous? Bulgur? Red lentil? Freekeh? Those are at least the things I have at home. I don't intend to put any condiments over those. I love them pure and simple :blush:

    All of those sound good to me. :) I'm a fan of wild rice so personally I'd go for that.

    i'd probably do something like farro or barley because they are my current go-to grains

    Yes. Pick one. I’d jazz it up with a teaspoon of melted butter and a little pepper.

    I'd have something like that with a vegie mash (potato, sweet potato, Cauliflower, a mixture... Whatever!)... Or eat it as is with nice crusty bread to soak up the sauce (if there's sauce)...

    Ok, I decided on rice with a crust as it basically cooks itself in my tiny rice cooker and because I was hungry from walking outside for a while. It was absolutely delicious!
