I don't eat meat, but potatoes always...mashed, baked, roasted, french fries, perogies....perfect side dish

Steam up mash potatoes THEN mash them with a dash of milk and smidge of butter THEN put the mash in a tray and bake till it has a skin.

Forget the chicken and just eat this potato goodness or if you must, eat it with the chicken.

Potatoes, rice, veggies. We make packet potatoes, there's probably a name for it but that's what we call them.

Foil sheets, cut up little (small) chunks of potatoes, sliced onions, chopped pieces of bell peppers, salt, pepper, (your choice of seasoning otherwise) drizzle of EV olive oil, close packet, crimp ends so nothing falls/drips out, put on grill, cook until tender (open slightly, check with fork) or bake in the oven too.

They're good on their own, but with sour cream is good too!

Broccoli, Zucchini, rice noodles, a scrambled egg, all in soy sauce with a gash of garlic chili sauce for some heat.

When I am determined to stay on track, I eat vegetables: microwaved broccoli with Trader Joe's Thai Red Curry Sauce or baby carrots. I actually make a lot of main dishes with chicken: chicken soups and chicken stir fry.
