Spinach Kodiak Pancakes

So delicious and easy to make!!
Makes 1 serving - so adjust as needed.

Blend 1/4 cup of water and 1 cup spinach until spinach is in liquid form.
Add 1/4 cup water, 1/2 cup Kodiak mix, and 1 egg. Blend.

Cook like normal pancake

    But I like spinach. Like I eat it raw with my fingers. So I don't understand putting it in a pancake lol. This boggles mah miiiiiind.

    I’m more about honouring the food. If you want to supplement the pancake add half a scoop of vanilla protein powder.

    If you want to honour the spinach serve it with strawberries, fresh mozzarella and a drizzle of balsamic vinegar.

    Taste, texture, micronutrients, fiber, and an impressive balance of macros.

    I make zucchini protein pancakes.... They sound more appealing to me than ones with spinach!

    I make potato pancakes with shredded potato and a little pepper. This preserves some of the texture of the potato.
