I’m looking for alternatives to potatoes with my dinner. Anything I can have like that on the side with chicken or lean meats?? Not a huge veggie fan either.

Rice might be an option, or sweet potatoes.
  • Mashed cauliflower, riced cauliflower.

It really depends why you are looking for an alternative. Calories? Carbs? Allergies?

Ah, can't help you there, I eat lots of carbs  I'm sure you'll get plenty of other ideas here soon, lots of low carbers.

For that long week when I tried Keto (definitely not the diet for me), I found mashed cauliflower the best potato substitute. Taste and texture like mashed potato after I had added cream and salt.
For just generic substitutes for potato but still carbs, I like couscous.

If you're a lazy cook, the Green Giant bags of frozen "riced" cauliflower mixes are really handy. Plain cauli, one with broccoli, one with like peas and onions very low cal, and the one with sweet potato if you can spare some more. They are good sauteed up as sides or you can mix them into almost anything to add nice fibrous volume (eggs, stir fries, taco meat, whatever).
