Some of my favorite non-meat meal options are: chili (try it with different beans to mix it up -- my favorites are black beans, kidney beans, and chickpeas), red beans and rice, lasagna, pasta puttanesca, enchiladas, potato soup, roasted mushrooms on baked potato/mashed potatoes, stir-fry, and noodles/zucchini noodles with peanut sauce.
I'll. at anything like this as long as long as it hasn't got sweet potatoes in0 -
For a good meal when you are never satisfied I find Chili to be the best! I use extra lean ground beef and then I add all types of veggies to it. Peppers, spinach, tomatoes and even chop up broccoli really fine. So hearty and lean! This also freezes really well!0
